Blacken Tilapia with Black Bean, Corn, Avocado Salad over Cilantro Lime Rice with Chipotle Cream Sauce..

Hey Everyone! 
Here with another easy and tasty dinner or even lunch Idea for the end of summer. 
It's Blacken Tilapia with Black, Corn, Avocado Salad over Cilantro Lime Rice with a Chipotle Cream Sauce.. 

Doesn't that look Delicious..
My Family Loved It. Will my hubby and middle daughter love it. My baby girl isn't a seafood eater. Don't ask me why, I have no idea because being from New Orleans, that's all we do.
She was born in Texas, so I'll let it pass.. 

It's seems like alot of ingredients but it's super easy to put together.

Ingredients Needed: 

(For the Blacken Fish)
Tilapia or any fish you like
1/2 of stick of Butter
(All Spices are put in a cup, 1/2 teaspoon of each)
Onion Powder
Garlic Powder
Chili Powder
Old Bay Seasoning (optional)

Pre-Heat oven 375 degrees

 Salad Ingredients

Canned or Frozen Corn Thawed Drained
Canned Black Beans Drained
1 Medium Tomato
1/4  Red Onion
1 Avocado
1/4 cup of Cilantro
1 Lime Juice

Chop veggies up and put in bowl.

Rice Ingredients

Lime Zest
Lime Juice

Cook rice as directed and then add Cilantro

Chipotle Sauce Ingredients

1/4 Cup Canned Chipotle 
1/2 Cup Sour Cream

Put it blender, 2 seconds and your done.. 

Melt butter on a lipped plate in a microwave. 

Clean and dry fish

Dip fish into butter and place on butter cookie sheet.

Take 1/2 tsp of spices and sprinkle on fish.
You don't have to do both sides.

Close Up..

Put in oven for 20 minutes and under broiler for 3-5 minutes.
All done!
Put Rice in plate, add Salad, then fish on top.
Drizzle Chipotle Sauce on or around fish.

That's It!
It may sound like alot of steps and ingredients, but once you put the rice on, fish in the oven, you can make the salad. Then 2 minutes to make sauce, it's a easy and healthy week night meal.

New Orleans Style Homemade Yaka-Mein!!
If you're not form New Orleans, then you probably will not know what this is. But if you do, then here's the recipe for "Yaka-Meat". Yaka-Meat originated Link above to make a long story short..

 I know it looks a little gross but believe me, the outcome is delicious!  Put Meat, Cubes,  Seasoning, Kitchen Bouquet in a big pot, let it simmer for about 5 minutes or until the beef is browned. Add the 3-4 quarts of water and half bottles of Worcestershire and Soy sauce. Bring to a boil; reduce heat to medium and let cook about 2-3 hours or until beef is tender enough to fall apart. 


New Orleans Style Seafood Gumbo Recipe

Gumbo is one of my husband's favorite dishes  he LOVES me to make..  If it was up him, we'd have it every week..  "TOO EXPENSIVE" Especially living in Dallas.. 
Well here's a short cut, easy way to make my delicious New Orleans Style Seafood Gumbo..

Ingredients: Seafood Stock  Creole Gumbo Base ( I also made a roux) Crab meat 3 cans Whole Oysters Canned ( raw wasn't available) 1-2 Pounds of Shrimp 10-15 crabs S/P Bay Leaves Gumbo File' Water 3 Onions 3 Celery Stacks 6 Garlic Cloves Turkey Sausage 1/2 Cup of Flour Rice

Chop and saute onions, celery and garlic until all veggies are translucent.  

Put aside and in same pan brown sausage.

Combine veggies and sausage together. Put 1/2 cup of flour in veggies and mix until is becomes pasty.

Add Seafood Stock and Bay Leaves in Stock Pot. Let simmer for about 5 minutes to get the flavor out of the B/L..

Girls Bedroom Series: Part 3 DIY Pillows..

Hey Everyone!!! I'm back with another post on my girls bedroom design. Well, my husband and I frequently go to Wally World and browsing through the fabric section. On this day particular day I walk right passed it then turned my head to the right and in a split second. Like a child a running across the street without o any guidance. I was hit by this fabric. I was soo overjoyed, I couldn't stop talking to the lady who cut my fabric. She just smiled and nodded, she was probably thinking I was some crazy person.  I DID NOT CARE!!!! 😁😁

She $7 a yard and I only bought one. If it was $30 a yard I would bought it too.. I wanted this material. It actually a home decor fabric just what I needed.
I looked into my stash at home and found these 2 quarter yard yellow fabric squares, plus the rope from Dollar Tree. 

Step one: Measure your rope by putting the fabric around it. I measured 3 inches..

Fold fabric the inches you measured then iron flat for a good cress.
